POSITION SUMMARY:

The Facility Maintenance and Dishwasher is a hands-on position that is responsible to clean and maintain the dish room and facilities.

 

SPECIFIC RESPONSIBILITIES:

  • Dishwashing
  • Assembly of boxes, trash removal, and maintain towels and aprons in dish area.
  • Understand all federal, state, and local requirements, i.e. meeting temperature standards, dish and equipment handling and hand washing.
  • Ensure food safe handling

 

EDUCATION/QUALIFICATIONS:

  • Must have a flexible work schedule.

→ PASTRY COOK

Title:

POSITION SUMMARY:

The Pastry Cook produces laminated dough products for wholesale distribution. The Pastry Cook will prepare all made from scratch products using approved recipes, quality ingredients, and creativity as it relates to Colectivo Coffee Roaster’s, and Troubadour Bakery’s mission and vision.

 

SPECIFIC RESPONSIBILITIES:

  • Works in accordance with all federal, state, and local food safe production facility requirements.
  • Responsible for preparing pastries and bake goods at the highest quality taste, texture, and presentation.
  • Responsible for reviewing production schedules to assemble supplies and equipment for daily work shift.
  • Responsible for completing work in a timely and efficient manner while managing product waste
  • Responsible for reporting concerns or needs with equipment, ingredients, and supplies, to General Manager / Operations Manager
  • Can cross train and support other area including Bread Program, Mixing, Baking, and Bar Making when needed.
  • Responsible for daily ordering and inventory

 

EDUCATION/QUALIFICATIONS:

  • Must have flexible schedule. Early mornings and weekends required.
  • College/Trade School degree in Pastry/Food Preparation and or 2-3 years previous experience a plus.
  • Passion for laminated bakery products and learning new techniques.

→ 3RD SHIFT BREAD BAKER

Title:

3rd Shift Production Baker

POSITION SUMMARY:

The 3rd Shift Production Baker’s daily responsibility is to collaborate with other members of the bakery team and to complete the tasks necessary to meet the needs of bread production as it relates to Colectivo and Troubadour’s Mission and Values.

 

SPECIFIC RESPONSIBILITIES:

  • Ensure that all bakery areas and equipment are safe and sanitary in accordance with food handling procedures; keep area clean throughout shift and follow cleaning procedures at end of shift.
  • Accurately follow formulas in the preparation of all dough correctly and safely utilize all mixing, lamination and baking equipment.
  • Precisely scale, shape and score loaves. Assure finished baked products meet quality standards.
  • Mix, mould, prepare, and bake pastry shells as required.
  • Maintain correct inventory, recommend replenishment orders and properly store, date and rotate inventory items.
  • Organize ingredient storage and all supplies and equipment.
  • Read and follow recipes in order to complete them accurately and efficiently.
  • Portion dough accurately and efficiently.
  • Work on the table to hand shape dough to specification.
  • Operate and maintain production machinery safely.
  • Work clean while following Food Safety Procedures.
  • Review production schedules to determine variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activity.
  • Accurate mixing of ingredients and portioning to fulfill quantities needed for daily production and to ensure consistency in the finished product.
  • Clean and maintain work areas, utensils, and equipment to ensure food and personal safety.

 

EDUCATION/QUALIFICATIONS:

This position requires a high school diploma or equivalent and basic reading and math skills. Must be willing to communicate and follow directions. Must be detail-oriented. Must be able to lift at least 50lbs.

→ 2ND SHIFT PREP COOK

POSITION SUMMARY:

This position is an entry level position that supports production in the Savory and Bakery Departments. Some of the supporting tasks include, but are not limited to: slicing, dicing, chopping, mixing and portioning of ingredients.

 

SPECIFIC RESPONSIBILITIES:

  • Refer to Daily Prep List at the start of each day.
  • Understand and comply consistently with our standard portion sizes, quality standards and kitchen rules, policies and procedures.
  • Maintain a clean and sanitary work station area including tables, shelves, walls and all other equipment used to complete Daily Prep List.
  • Attend all scheduled co-worker meetings and bring suggestions for improvement.
  • Promptly reports equipment and food quality problems to Operations Manager.
  • Inform Operations Manager immediately of product shortages.
  • Store food properly to prevent spoilage.
  • Organize and put food supplies and equipment away in their proper places.
  • Other duties or projects as assigned.

 

REQUIREMENTS:

This position requires clear communication with managers, supervisors and other co-workers and an ability to read and write. This position also requires a good sense of organization, a high respect for food and high sense of urgency. Must be able to reach, bend, stoop and frequently lift up to 50lbs.

→ 2ND SHIFT PRODUCTION BAKER

POSITION SUMMARY:

The Production Baker’s daily responsibility is to collaborate with other members of the bakery team and to complete the tasks necessary to meet the needs of daily production, such as: the preparation of cookies, muffins, scones, quick breads and other baked products. an entry level position that supports production in the Savory and Bakery Departments. Some of the supporting tasks include, but are not limited to: slicing, dicing, chopping, mixing and portioning of ingredients.

 

SPECIFIC RESPONSIBILITIES:

  • Read and follow recipes in order to complete them accurately and efficiently.
  • Portion batters and/or dough.
  • Work on table to hand shape dough to specification.
  • Work clean while following Food Safety Procedures.
  • Mixing of ingredients and portioning to fulfill quantities needed for daily production and to ensure consistency in final product.Packing product according to customer orders to ensure accurate and efficient product delivery.
